1 Jar Grape Leaves (approx 50) rinsed
2 1/2 to 3 lbs chopped meat
2 1/2 to 3 cups rice, rinsed
2 tbsp salt
2 tsp pepper
3 tsp allspice
water
garlic
lemon juice (approx 1/2 cup)

Combine rinsed rice* and spices (salt, pepper and allspice). Mix in chopped meat. Add water if too firm.
Place 1-2 tbsp. meat/rice mixture onto leaf. Roll. Place in bottom of pot (4 qt)
Sprinkle Garlic between layers. Each layer should be 90 degrees offset from previous layer.
Cover with inverted dishes (small) Cover with water. Cover Pot.
Simmer for 25 minutes. Add lemon juice. Simmer for 10 more minutes.

*NOTE: When making Syrian food that requires uncooked rice or cracked wheat, first soak the rice/wheat in cool water... this rinses it a little and also starts to soften it. The rice can then be drained and the wheat is squeezed until very little water remains.
