6 small zucchini (6-8 inches long)
1 lb. chopped meat
3/4 cup uncooked rice
salt aprox 1 1/2 tbsp
pepper aprox 1 1/2 tsp
allspice aprox 1 1/2 tsp

Sauce
1 15 ounce can tomato sauce
water
garlic powder aprox 1 tsp
spearmint aprox 2 tsp

Mix chopped meat, uncooked rice*, salt pepper, and allspice. If very stiff add a small amount of water. Divide in half. In large rosting pan place zucchini and meat/rice mixture in 5 layers. :
1. 2 zucchini sliced
2. 1/2 meat/rice mixture in small pieces about the size of a small walnut.
3. 2 zucchini sliced
4. 1/2 meat/rice mixture as in layer 2
5. 2 zucchini sliced

Sauce
Mix together tomato sauce, garlic powder, spearmint, and 1-2 cans water (enough to almost cover zucchini) Pour over zucchini and meat/rice.

Bake at 450 degrees for about 45 minutes. Baste the squash 2-3 times during baking, this keeps the top ones from getting dried out.

*NOTE: When making Syrian food that requires uncooked rice or cracked wheat, first soak the rice/wheat in cool water... this rinses it a little and also starts to soften it. The rice can then be drained and the wheat is squeezed until very little water remains.
