1 lb lentils (rinsed) 1 1/2 cups coarse wheat 6 cups water 5 large onions 3/4 cup oil 1 1/2 tsp salt 1/2 tsp pepper In large pot place lentils, wheat*, and water. Cook over medium heat (You may want to start on high then lower heat when boiling.) Stir often. In large frying pan, fry sliced onions in oil. (Cook on high heat) Stir constantly until onions are browned. When lentils are almost cooked (very little water left), Add onions and oil. Add salt and pepper. *NOTE: When making Syrian food that requires uncooked rice or cracked wheat, first soak the rice/wheat in cool water... this rinses it a little and also starts to soften it. The rice can then be drained and the wheat is squeezed until very little water remains.
